Zucchini Chip Cookies 1/2 cup butter, softened Preheat oven 375 degrees. Cream butter and sugar until light & fluffy. Add egg, vanilla & zucchini (squeeze out excess water). Combine all dry ingredients add to butter mixture. Stir in chocolate chips. Drop round tablespoons, about 2 apart, on silpat lined cookie sheet. Bake 8-10 minutes or until edges are golden.
