Zucchini Chip Cookies

1/2 cup butter, softened
1 cup brown sugar
1 egg, room temperature
1 teaspoon vanilla extract
1 cup grated zucchini
1-1/4 cups flour
1 teaspoon baking soda
pinch of salt
1 cup semisweet chocolate chips

Preheat oven 375 degrees. Cream butter and sugar until light & fluffy. Add egg, vanilla & zucchini (squeeze out excess water). Combine all dry ingredients add to butter mixture. Stir in chocolate chips. Drop round tablespoons, about 2” apart, on silpat lined cookie sheet. Bake 8-10 minutes or until edges are golden. Cool on rack. This is a soft, chewy cookie!
