Melon Skewers with Lime-Orange Marinade
from Cathy Kidd of Aquebogue*

Here's a quickie to jazz up your summer melons!!

1 cup of fresh squeezed orange juice (3 to 4 oranges)
1/4 cup of fresh squeezed lime juice (2 to 3 limes)
1/3 cup of sugar
1/2 cup of water
3 pounds of assorted melon, cut into 1 inch bite sized cubes
skewers

1. Bring water and sugar to a boil in a small saucepan, and continuously stir till sugar dissolves. 1 to 2 minutes.

2. Remove syrup from heat and let cool. When cooled add to orange juice. Now stir in the lime juice

3. Put six pieces of fruit on skewers, alternating variety for nice display.
Lay skewers in a sealable container and poor the marinade mixture over them. Keep in a cool place untill
serving time.

Add some chopped herbs to spice it up, basil works nicely!!!
