Marinated White Bean Salad

Ingredients:

1 large can white beans, rinsed and drained
½ of a red onion, minced
1 red pepper, finely diced
1 small cucumber, finely diced
kernels from 2 ears of corn
juice of 1 lemon
¼ cup minced fresh herb, such as basil, cilantro or mint
¼ cup extra virgin olive oil
salt and pepper to taste

Procedure:

Mix all ingredients together, let stand at room temperature for ½ hour then serve or refrigerate.
