Irish Soda Bread
from Paula Croteau of Southold*

Ingredients:
4 cups flour, plus 1 tablespoon for dusting
1/2 cup sugar
2 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3 cups assorted dried fruit
(yellow raisins, cranberries, currants)
1 tablespoon caraway seeds (optional)
2 eggs, lightly beaten
1-1/4 cups buttermilk
1 cup sour cream

Preheat oven 350 degrees.
Butter 9” round pan, or (4) 6” pans
Combine all dry ingredients.
Blend all wet ingredients.
Stir into flour mixture just until combined.
Dough will be very sticky.
Transfer dough to prepared pan & dust with flour.
Bake 50- 60 minutes, (30-40 minutes smaller pans) or until toothpick inserts clean.
Cool in pans 10 minutes, then on wire rack.

Wellness Tip: Use 1/2 Whole Wheat & 1/2 unbleached White Flour and Fat Free Sour Cream!
