Irish Soda Bread
from Paula Croteau of Southold*
Ingredients:
4 cups flour, plus 1 tablespoon for dusting
1/2 cup sugar
2 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3 cups assorted dried fruit
(yellow raisins, cranberries, currants)
1 tablespoon caraway seeds (optional)
2 eggs, lightly beaten
1-1/4 cups buttermilk
1 cup sour cream
Preheat oven 350 degrees.
Butter 9 round pan, or (4) 6 pans
Combine all dry ingredients.
Blend all wet ingredients.
Stir into flour mixture just until combined.
Dough will be very sticky.
Transfer dough to prepared pan & dust with flour.
Bake 50- 60 minutes, (30-40 minutes smaller pans) or until toothpick
inserts clean.
Cool in pans 10 minutes, then on wire rack.
Wellness Tip: Use 1/2 Whole Wheat & 1/2 unbleached
