Blueberry Salsa
from Paula Croteau of Southold*

This recipe is great with grilled chicken, fish or pork!

2 cups fresh blueberries
1/4 cup red onion, chopped
1 jalapeno chile, seeded (choose amount used)
2 tablespoon fresh cilantro
2 teaspoon fresh lime juice
1/4 teaspoon coarse salt
1/2 teaspoon sugar or honey

In a medium bowl, mash 1/2 cup blueberries.
Add remaining blueberries, onion, chile & cilantro, stir.
Add lime, salt & sugar.
Can be made up to 4 hrs ahead & refrigerated, covered.
Bring to room temperature and serve.
