Apple Walnut Cake
from Paula Croteau, Southold

1-1/2 cups vegetable oil
2 cups sugar
3 eggs, lightly beaten
1 teaspoon vanilla
3 cups all purpose flour
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
3 cups apples, peeled, cored & sliced
1 cup raisins and/or dried cranberries and/or dried cherries
1 cup walnuts, toasted and chopped

Preheat oven to 350 degrees. Grease and flour a tube pan. In a large bowl, mix sugar into oil. Add eggs and vanilla. Sift flour, cinnamon, salt and baking soda. Add dry ingredients to batter and mix just until combined. Add apples, dried fruit, and nuts. Bake for one hour or until toothpick comes out clean. Cool before removing from pan.

Nutrition Tip: Try using half whole wheat flour and/or half cornmeal
